Good afternoon ONF shoppers and owners! It’s been a rainy/cloudy week, the perfect weather to sit indoors with a good book or movie and eat some comfort food. This week in the Produce department we have a lovely selection of locally grown peppers, including a wide variety of colored bell peppers (there’s even purple)! And speaking of the color purple, we have received our first shipment of bulk purple potatoes this week! Be sure to check them out and add some color to your weekly menu!
I would now like to share a delicious recipe for stuffed bell peppers to help inspire your cold weather appetite.
You will need:
• 4 medium to large bell peppers
• 1/2 yellow onion
• ½ lb ground beef (optional)
• 2 to 3 cloves of fresh garlic
• 1 tomato
• 1 or 2 jalapenos
• Shredded cheese
Preheat your oven to 350 degrees.
Cut the tops off your bell peppers, and clean out all seeds and white flesh from the inside. You can use any extra parts from the bell pepper top to add to your stuffing mix. Sauté your meat and other veggies on the stovetop, adding salt and pepper to taste. When your meat and veggies are done, stuff your bell peppers with the finished product and top off with a generous amount of cheese. You can also place your sauté mix and cheese in multiple layers if you prefer.
Bake for approximately 20 to 30 minutes. Remove from oven and devour!
This recipe can, of course, be modified to your special tastes. Be creative with your stuffing mix! Throw some carrots or even potatoes in the mix. You can’t really go wrong with a stuffed bell pepper in my opinion. Have a great weekend all!
